chocolate, thyme cake

Thyme is my all time favourite winter herb. I love the strong balsamic scent of it, that makes me dream of warm summer days, gattering thyme flowers for sirup and salats. How they were covered over and over with bees, butterflies and other insects.In the winter thyme is my favourite remedy for the flue or a strong cold. There's nothing better than being cuddled in your favourite blanket, sitting in your cozy warm apartment with a cup of hot thyme tea and observing the dancing snowflakes outside the window.
So lets fill the dark winterdays with the strong balsamic scent and taste of this wonderful herb.

 


cake
  • 6 dl flour ( I used spelt)
  • 3 1/2 dl coconut sugar
  • 3 1/2 dl oat milk ( or other vegan milk )
  • 1 dl sunflower oil
  • 1,5 teespoon baking pouder
  • 1 dl cacao
  • a pinch of vanilla pouder
  • a pinch of cinnamon
  • a pinch of salt
Mix all the ingedients until you have a smooth dough. Place in two greased small springforms ( if you just have one, split the dough in half and bake one at a time ).  Bake on 175 degrees (celcius) for ca. 45 min ( if you have a samll springform, a bigger one could take longer ) .
Let the cakes cool down, then cut in half and fill with thyme cream.




thyme cream
  • 4dl vegan butter
  • a pinch of vanilla pouder
  • 1 dl vegan creme fraiche
  • 3 tablespoons thyme ( frech or dried)
  • ca. 15 dl powdered sugar 
  • ca. 1 dl vegan milk ( if you want it smoother add more, but it should still stick good on a spoon )
Cook the thyme for ca. 15 min in the vegan butter. Then take it through a sif and let the butter get hard again.
Mix all the ingredients good together until you have a thick cream and place on cakes. Garnish the cake and serve !
