blueberry, vanilla ice cream

Summer is here and it is ice cream time. In Sweden the first blueberries are ready, so I made the first blueberry ice cream for this season.
This is a very easy and yummy recipe for which you not even need a ice cream maker. You of course can replace the blueberries with all kind of fruits, cookies or cacao!

  • 200 ml coconut milk
  • 200 ml oat cream
  • 100 ml agave sirup
  • 250 gr blueberries
  •  2 tbsp potatoe starch
  • a pinch of vanilla powder and salt

Mix the coconut milk, agave sirup and the potatoe starch in a pot and heat it up. Let it simmer until you have a thicker texture. Then mix it with the remaining ingredients and blend it until you have a smooth cream.
Place it in a container ( it should be big enough for stiring ). Place it for an hour in the freezer then take it out and stir it. Repeat this 2-3 times until you have a soft ice like texture. Now fill the ice cream in a smaller container and freeze it for 2-3 hours more until it reached the perfect hardness for serving.
