easy vegan apple pie

The temperatures changed and autumn arrived in sweden. Now it is time for tea, knitting and autumn treats. My all time favourite autumn treat will always be an easy, simple apple pie with homegrown sour apples.
Lucky me, we have four apple trees in our garden, so way enough apples to make juice, jam and pastries out of it.
This is my favourite apple pie recipe. It is super simple and you really don't need a lot of ingredients.


dough
  • 340 gr spelt flour ( or wheat flour )
  • 150 gr vegan margarin ( melted )
  • 100 ml water
  • a pinch of salt
  • 1 tbsp organic brown sugar or coconut sugar
Mix all the ingedients to a easy kneadable dough. If the dough is too sticky add a bit flour.
Give it in the fridge to rest, while preparing the rest.


filling
  • 6 normal sized apples
  • 4 tbsp organic brown sugar or coconut sugar
  • 1 tbsp potato or corn starch
  • 2 tsp cinnamon

Peel the apples and cut them in slices. Mix the dry ingredients in a little bowl.


Grease the pie form with vegan margarin. Take a bit less then half the dough and roll it out ( 3-5 mm thick ) so it fits in your greased pie form and covers the bottom & sides.
Now start to fill it. First one layer apples then spread a bit of the cinnamon, sugar mixture over the apples. Do the next layer apples and so on until the form is filled.
Now decorate the top like you want. Here is an easy instruction for the weaving part


Sprinkle vegan oat milk over the crust and bake for ca. 30-40 min on 180°C until the crust is golden brown.
Serve it warm or let it cool down and enjoy!
