elderberry, aronia sirup

October is close and of course I got my first cold for this season. Even though I work five days a week outside on the fresh air I still get every autumn and spring a cold.
My mom already gave me everytime I had a cold or the flue elderberry sirup and as much as I hated it when I was a child, I love it now.
Elderberry sirup is not just a great immun boost during autumn/ winter. It also helps to cleanse our blood and can help with nerv inflammtions.
This is a very basic sirup recipe. I made it with elderberries and aronia berries.
Aronia berries are high in antioxidants. Together with the elderberries they are just the best remedy for colds and they just taste so good!

what you need
  • elderberries
  • aronia berries ( you can use just elderberries if you don't have any aronia bushes close)
  • sugar
  • spices if wished ( I already did it with cinnamon, cardamom, ginger and cloves )

I pick berries always far away from traffic to have them as clean and organic as possible. Wash them and then fill a big pot with the berries ( some take the stems away, I am too lazy for it ). Alternative you can use a steam juicer ( that is how I do it now, but the pot version works also perfect).
Fill ca. 2 cm high water in the pot and cook the berries until they are soft and wrinkled.
Filter the juice through a towel.
Fill the juice back in a pot and boil it. Give on 1 liter juice 500 gr sugar and let it cook for 5 minutes.
Then fill it in clean jars or bottles and let it cool down. You can afterwards also sterilize them in a hot waterbath for 30 minutes.
You can drink it cold, with water, in tea or hot mixed with apple / organce juice.
