no bake / vegan / pear / cream cheese pie with chocolate crust

I love baking so so much and often its those simple cakes that are the most delicious.
The last weeks the light changed and it feels like autumn here.
Autumn and winter are my favourite seasons. I love the first windy autumn days, hot chocolate, knitted sweaters, the first fire in the stove, elderberries, apples and of course pears.
I recently discovered pear cakes and pies again and wanted so much share with you a simple no bake recipe I developed. Hope you will enjoy it as much as I do.




crust
  • 100 gr almonds
  • 70 gr oats
  • 150 gr fresh dates
  • 3 tbsp cacao
  • 3 tbsp melted coconut oil
Blend the almonds in a food processor to small crumbs. Then add the remaining ingredients for the crust. Blend it until it starts to be sticky.
Press the dough into a pie form. Chill it in the freezer while preparing the filling.



filling
  •  300 gr vegan cream cheese ( my favourite it på mackan by oatly)
  • 5 tbsp maple sirup  
Mix the ingredients to a smooth cream and spread on the pie crust. Chill it in the freezer while preparing the topping.

 



topping
  • 4 medium sized pears
  • 4 tbsp maple sirup
  • spices you like ( I used vanilla, cardamom, cinnamon and cloves)
  • vegan margarin for frying

Slice the pears. Melt some vegan margarin in a pan and add the pear slices. Spice them and add the maple sirup. Fry them until they start to get soft. Let them cool down a bit then spread on the filling.
You can decorate the pie with nuts or serve with vegan whipped cream. If you don't serve it directly then chill it in the fridge. Enjoy!
