Every even sunday we have something called "Söndagslunch i Nyköping" in our local culture house.
The idea is about the same like a common soup kitchen or "vokü" like we say in german. We cook a vegan lunch and everyone can come eat and donate as much as they want or better give what they can.
I sometimes make a little dessert. For this sunday I prepared some "vaniljbullar" (vanilla buns). Like always vegan, FOR THE ANIMALS and THE PLANET.
The recipe makes around 30 rolls.
- 1 kg wheat flour
- 150 gr vegan margarine
- 300 ml oat milk
- 250 ml water
- 50 gr fresh yeast
- 6 tbsp organic sugar
- a pinch of salt
- 1/2 tsp cardamom
Melt the vegan margarine and add the cold oat milk and water. Dissolve the fresh yeast in the margarin/ milk mix. Mix in a big bowl flour, salt, sugar and cardamom, add the margarin/ milk mix and knead the dough until it is smooth and even. Place it in a bowl, cover and let it rest for an hour.
- 100 gr vegan margarine
- 100 gr organic sugar
- 400 ml oat milk
- 2,5 tbsp potatoe starch
- 1 tsp bourbon vanilla powder ( you can also use the inside of two vanilla beans or vanilla aroma)
Mix in a pot all the ingredients and heat it up under constant stiring. After a few minutes the margarine is dissolved and the mixture starts to get thicker. When you have a thick pudding consistence, switch off the stove and let it cool down.
Split the dough in two even pieces. Take the first piece, place it on a lightly floured surface and roll it out approx. 1 cm thick, 35cm wide and 45cm long. Spread half of the vanilla filling on it and gently roll in along the long edge until you have a roll. Cut the roll in 2cm thick slices and place them on a baking sheet. Repeat the same with the other piece of dough.
Let prepared rools rise for another 30 min. Then brush them with some oat milk and sprinkle pearl sugar over them. Bake in the oven for about 8 min on 250 degrees celcius and if needed for another 2-4 on 200 degrees. Enjoy warm or let them cool down.
